Chop the red onion, tomato, green bell pepper and orange bell pepper.
Thinly slice the mushrooms.
Keep aside.
To prepare the white sauce for the rainbow pizza, melt butter in a pan over medium heat.
Add all purpose flour and cook for a few minutes (2 minutes or so) until cooked and aromatic. Do not let the flour change color. Keep stirring to avoid burning.
Add milk and garlic and whisk continuously to get rid of any lumps.
Season with salt and pepper.
Cook till the sauce thickens and turn the flame off.
For the chicken topping, take a frozen chicken breast out of the freezer and cut into small cubes. Do not defrost the chicken otherwise you will not get perfect cube-shaped chicken bites.
Heat oil in a pan and add the chicken bites.
Add salt and pepper according to your taste
Cook the chicken over high flame. Cooking on high flame ensures that the surface of the chicken is sealed quickly and its juices are retained. This way the cooked chicken will be very tender and succulent.
Take your pre-baked pizza dough and spread the white sauce on it.
Top with chicken, vegetables, pickled jalapenos and mozarella cheese.
Bake in a pre-heated oven at 230 degrees for 10 mins.
