Wash the rice until the water runs clear. Soak for about an hour.
Mix the ingredients to make the spice mix. Keep aside.
Pound the chicken pieces to flatten them and cut into big chunks.
Marinate with 3 tablespoons of spice mix for half an hour.
Heat a few tablespoons of oil in a pan or a grill. Add the chicken pieces and cook fully until charred on each side. Take out in a dish and keep aside for later.
For the rice, thinly slice the onion sauté in 2 teaspoons oil until translucent.
Thinly slice the green and the red bell pepper. Add to the onions and saute for half a minute. Do not allow them to soften.
Add rice and 5-6 cups of water (depending on your rice).
Crumble up the chicken cubes and add to the rice.
Add the remaining fajita spice mix.
Put the chicken pieces on the rice and cook on medium flame until the water almost evaporates.
Then cover the pan and allow to steam until the rice is cooked, for 10-15 minutes
Garnish with the cilantro and lemon wedges. Enjoy!
