Crispy Spinach Pakora

Ingredients
Fresh spinach 1 medium bunch
finely chopped
Onion 1 small
chopped
Ginger paste 1/4 tsp
Garlic paste 1/4 tsp
Green chilies 1-2
sliced
Besan Pakora Mix 4-5 tbsp - Recipe below
Besan Pakora Mix
Besan (Gram flour) 6 tbsp
Corn flour 1 tbsp
Rice flour 1 tbsp
Salt to taste
Turmeric powder 1/2 tsp
Cumin powder 1 tsp
Ajwain (carom seeds) 1/4 tsp
Baking soda a pinch
Red chili powder to taste
Chat Masala 1 tsp
Red chili powder to taste
Instructions
Add spinach, onion, ginger paste and garlic paste and green chilies to a bowl.
Add 4 heaped tbsp of besan pakora mix.
Mix everything well. Now add little water and mix to form a thick mixture.
Let the mixture stand for 5 minutes.
Heat oil and add the spinach pakora mixture in small dollops.
Fry until golden.
Take out and enjoy with mint chutney.
