Quick Stir-fried Chinese Rice

Ingredients
Oil 2 tbsp
Garlic chopped 1 tbsp
Spring onions 4 tbsp
Green beans 1.5 cups
cut into long pieces (I used frozen)
Bell peppers any color 1.5 cups
finely chopped (I used yellow, green and red)
Boiled rice 3 cups
Soy sauce 4 tbsp
Eggs 3
Garnish: Spring onions 4 tbsp
Instructions
Heat oil in a wok and add garlic and spring onions.
Sauté for 1 minute.
Add green beans and bell peppers. Stir fry at high for 3-4 minutes until the moisture from the veggies has evaporated.
Add boiled rice and soy sauce.
Mix well. Make a hole in the middle of the wok and add eggs.
Scramble the eggs and mix with the rice.
Garnish with spring onions.
Serve hot with any Chinese curry. Enjoy!
