Sweet Potato Raita (Shakarkandi Raita)

Ingredients
Sweet Potato 1 big
Oil 2 tbsp
Chopped onion 2 tbsp
Tomato 1 big
chopped
Fresh coriander 2 tbsp
chopped
Green chili 1 sliced
Yogurt 2 cups
Salt to taste
Chat masala 1 tsp
Cumin seeds 1/2 tsp
Instructions
Peel and cut the sweet potato into 1 cm cubes.
Sauté in a frying pan in 2 tbsp oil until the sweet potato chunks are cooked (4-5 minutes).
Allow to cool to room temperature.
Meanwhile, chop onion, tomato, green chilies and fresh coriander.
In a bowl, whisk yogurt and add all the chopped vegetables, salt, chat masala and cumin seeds.
Mix well and lastly add the cooked sweet potatoes to the raita.
Mix and serve cold with some rice or sukhi sabzi.
