Carrot and lentil Soup

Ingredients

  • Red lentil 1 cup
  • Oil 2 tbsp
  • Onion 1 medium, chopped
  • Garlic cloves 2-3, chopped
  • Carrot 1 big, cubed
  • Tomato paste 2 heaped tbsp
  • Chicken cubes 2
  • Salt, if needed (chicken cubes mostly contain salt already)
  • Turmeric powder 1/2 tsp
  • Cumin powder 1/2 tsp
  • Paprika powder 1.5 heaped tsp
  • Water 4 cups
  • Fresh coriander for garnish

Preparation

  1. Heat oil in a pot and add onion and garlic. Sauté until soft.
  2. Add carrot and sauté for 1-2 minutes.
  3. Add tomato paste, chicken cubes, turmeric powder, cumin powder, paprika powder and water.
  4. Mix well, taste and adjust salt if needed. Cover and cook for 30-35 minutes until the carrots are super soft. Lentil should also be cooked by then. If needed, you can add more water while cooking.
  5. Now blend the soup using a hand blender until smooth and creamy.
  6. NOTE if using blender, allow the soup to cool first and then blend. Blending hot soup in a blender can cause serious burns. After blending, the soup can be warmed again.
  7. Garnish with freshly chopped coriander. Serve hot.
