No Fail Tandoori Roti on Tawa

Ingredients (for 8 rotis)

  • Aata (wheat flour) 3 cups
  • Salt 1/3 tsp
  • Baking powder 1 tsp
  • Baking soda 1/4 tsp
  • Yogurt 3/4 cup
  • Oil 2 tbsp
  • Water as needed (less than a cup)

Aata Glue

  • Aata 1 tbsp
  • Water as needed to make a thin paste

Preparation

  1. NOTE: I did not use any measuring cups or spoons for this recipe. Any cup and spoon would do.
  2. In a mixing bowl, add aata, salt, baking powder and baking soda. Mix well.
  3. Add yogurt and oil and mix roughly.
  4. Now start kneading by adding a little water at a time into a soft dough.
  5. Once the dough is formed, knead for 7-8 more minutes. This will result in soft rotiform inside but crunchy from outside.
  6. Cover and allow to stand for preferably 1.5 hour or at least 1 hour (not less than that).
  7. Now shape into 8 balls.
  8. Heat a pan or tawa on medium to high heat. Non-stick is also fine.
  9. Roll a dough ball into a a little thick roti and apply aata glue with a brush.
  10. Now place the roti on tawa (glue side down) and quickly press it on the tawa using your hands.
  11. Allow the bubbles to form on the roti. In 1 minute or so, whole roti will have bubbles. Now flip the tawa and cook the roti’s top side on direct flame.
  12. Repeat for the other rotis.
  13. Enjoy!
