Stuffed Bhindi | Bharwa Bhindi

Ingredients

Spice mix For stuffing

  • Okra (Bhindi) 400 grams
  • Salt 1/2 tsp
  • Red chili powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Garam Masala 1 tsp
  • Coriander powder 2 tsp
  • Cumin powder 1 tsp
  • Dried fenugreek (Methi) 1.5 tsp
  • Black salt 1/2 tsp
  • Lemon Juice 1 tbsp
  • Oil 2 tbsp or as needed

Other ingredients

  • Tomatoes 2 large, chopped
  • Onion 1 large, chopped
  • Salt to taste
  • Coriander powder 1 tsp
  • Green chilies 2-3
  • Oil 6-7 tbsp

 

Preparation

  1. Prepare the spice mix for stuffing by adding all the ingredients to a bowl and mixing. Add oil to moisten the spice mix so that it stays inside the okra once stuffed.
  2. Wash and pat dry the okra using a kitchen towel. Any moisture remaining in the okra will lead to sticky/slimy okra when cooked.
  3. Remove the tips of the okra and skit vertically. Fill in the stuffing.
  4. Now add 6-7 tbsp oil in a wok. Add chopped onions and cook until slightly golden.
  5. Add chopped tomatoes, salt and coriander powder and cook until raw smell goes off.
  6. Add okra, and some green chilies, cover and cook on low flame for 15-20 minutes until the okra is soft and ready. Sprinkle garam masala and stuffed bhindi (bharva bhindi) is done!
  7. Enjoy with homemade roti or rice.
