Tandoori Chicken Rice – Tasty and Unique One Pot Recipe

Ingredients

Marination

  • Salt 1/2 tbsp
  • Black pepper powder 1/2 tbsp
  • Cumin powder 1.5 tbsp
  • Coriander powder 1.5 tbsp
  • Paprika powder 1/2 tbsp
  • Tandoori masala 1.5 tbsp (I used Mehran)
  • Lemon juice of 1 lemon
  • Yogurt 5 tbsp
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Oil 2-3 tbsp
  • Chicken pieces 1.5 kg (I used drumsticks)

Other

  • Rice 3 cups, soaked in water
  • Onion 1 big, chopped
  • Oil 1/2 cup
  • Tomato paste 4 tbsp
  • Garam masala 1 tsp
  • Coriander powder 2 tsp
  • Cumin powder 1 tsp
  • Turmeric powder 3/4 tsp
  • Chicken cubes 1 or 2, as per taste
  • Salt if needed (chicken cubes contain a lot of salt already)
  • Green bell pepper 1, cut into small cubes

Garnish

  • Cilantro leaves
  • Red Chili sliced

Preparation

  1. Marinate the chicken pieces in the ingredients mentioned under “marination” for at least 1 hour to preferably overnight.
  2. To cook the rice, add oil add the chicken pieces. Cook on medium to high flame until the pieces are 100% cooked. Take the chicken pieces out.
  3. To the same oil add onions and sauté until soft.
  4. Add the remaining marinade from the chicken, tomato paste, garam masala, coriander powder, cumin powder, turmeric powder, salt, chicken cubes and mix until the marinade is cooked.
  5. Add drained rice and sauté until the moisture in the pot is absorbed by the rice.
  6. Add bell pepper and sauté for 1-2 minutes.
  7. Lastly add 6 cups of water and allow the rice to absorb all the water on medium to high flame. When the water is all evaporated and the bottom of the pot is dry, arrange the chicken pieces on the rice and put the rice on dum for 7-10 minutes or as needed.
  8. Garnish with cilantro and red chili slices and Enjoy!
