Chinese Chicken Pepper Stir-fry

Ingredients

  • Oil 2 tbsp
  • Garlic cloves 3, grated
  • Ginger 1 inch, chopped
  • Boneless Chicken 1 kg, cut into 1-inch cubes
  • Salt 1/2 tsp
  • Black pepper powder 3/4 tsp
  • Onion 1 medium, cut into 1-inch cubes
  • Red bell pepper, cut into 1-inch cubes
  • Yellow pepper, cut into 1-inch cubes
  • Chicken cubes 2
  • Soy sauce 3 tbsp
  • Chili sauce 4 tbsp (or more)
  • HP sauce (optional) 1 tbsp
  • Ketchup 3-4 Tbsp (as per choice)
  • Brown sugar 1 tbsp
  • Water 2 cups (at room temperature)
  • Chopped Spring onions, a handful
  • Sesame seeds for topping

Preparation

  1. In a wok, add oil and sauté grated garlic and chopped ginger for a minute.
  2. Add chicken, salt and black pepper powder and stir-fry on high heat until the chicken is cooked though completely.
  3. While the chicken is cooking, prepare the sauce. In a big mug add chicken cubes. Use a fork to mince the chicken cubes. Then add soy sauce, chili sauce, hp sauce, ketchup and brown sugar and 2 cups of water. Mix well and taste. Adjust if needed.
  4. When the chicken is stir-fried, add the onion, and bell peppers and sauté on high for 1-2 minutes until you can smell the aroma of the stir-fried veggies (1-2 minutes). NOTE: Do not overcook the veggies, we want crunch in the veggies, YUM!
  5. Now turn the flame to very low and add the sauce.
  6. Stir continuously until the sauce is thick and starts bubbling.
  7. Chinese Chicken Pepper Stir-fry is ready.
  8. Enjoy with plain boiled rice or Chinese rice.
