Juicy Turkish Kebabs

Ingredients

  • Chicken mince 2 kg (I used frozen chicken mince, you can make fresh mince)
  • Onions 2 big
  • Red bell pepper 1
  • Green bell pepper 1
  • Yellow bell pepper 1
  • Fresh coriander 2 handful, chopped
  • Garlic chopped 2 tbsp
  • Ginger chopped 1 tbsp
  • Green chili chopped (optional- as per taste)
  • Lemon juice 2 tbsp
  • Tomato paste 4 tbsp
  • Salt to taste
  • Black pepper powder to taste
  • Paprika powder 2 tbsp
  • Dried parsley 2 tbsp
  • Sumac 2 tbsp (optional)
  • Cumin powder 2 tbsp
  • Coriander powder 2 tbsp
  • Bread Slices 4-5, turned into crumbs

Preparation

  1. In a manual or electric chopper, chop onions, red, green and yellow bell peppers and drain out their juice using a strainer or a muslin cloth.
  2. NOTE: We do not need the juices in this recipe so instead of discarding you can add the juices to lentils or rice for extra flavor and nutrition.
  3. Chop fresh garlic, ginger and green chili in the chopper.
  4. Finely chop fresh coriander using knife and chopping board. Chopper is not needed here.
  5. Grind the bread slices into breadcrumbs.
  6. Now in a big mixing bowl, add chicken mince, drained bell peppers and onions, fresh coriander, green chili, garlic, ginger, lemon juice, and all the remaining ingredients.
  7. Mix well for at least 5-6 minutes. Cover and refrigerate for an hour to allow the flavors to infuse.
  8. Now shape into kebabs. You can shallow fry them in a pan, or grill them on a griller, or bake them in the air fryer/oven at 195°C for 10 minutes.
