Layered Chocolate Cake

Ingredients

Chocolate Cake:

  • Granulated sugar 2 cups
  • All-purpose flour 1 + 3/4 cup
  • Unsweetened cocoa powder 3/4 cup
  • Baking soda 1 + 1/2 tsp
  • Baking powder 1 + 1/2 tsp
  • 1 teaspoon salt 1 tsp
  • Eggs 2 large (at room temperature)
  • Milk 1 cup
  • Vinegar 1 tsp
  • Vegetable oil 1/2 cup
  • Vanilla extract 2 tsp
  • Boiling water 1 cup

Chocolate Frosting:

  • Chocolate 170 gm
  • Powdered Sugar 2 tbsp
  • Whipping Cream 500 ml

Thick Chocolate Sauce

  • Sugar 1 cup
  • Cocoa powder 1/3 cup
  • All-purpose flour 3 tbsp
  • Salt 1 pinch
  • Milk 1 + 3/4 cup
  • Vanilla extract 1 tsp
  • Unsalted Butter 3 tbsp

Cake Decoration

  • Chocolate shavings
  • Strawberries
  • Powdered Cookies (I used Marie biscuits)

Preparation

Chocolate Cake:

  1. Preheat oven to 180*C . Grease two 8 or 9 inch round baking pan or line with a parchment paper.
  2. In a small bowl, mix milk and vinegar and let it stand for 10 minutes.
  3. Meanwhile, sift and mix dry ingredients: sugar, flour, cocoa, baking powder, baking soda, and salt. 
  4. Add in eggs, vanilla, oil, buttermilk and stir very well. Add in boiling water and carefully mix to avoid splatter. This will make the batter very thin. Pour batter into prepared cake pan.
  5. Bake for 30-35 minutes at 180*C or until a toothpick inserted into the centre comes out clean.
  6. Allow to cool in the same pan.
  7. Now take out, cut into three layers.

Chocolate Frosting

  1. Melt chocolate. Allow to come to room temperature.
  2. In the meanwhile, add cold whipping cream to a bowl and whip until soft peaks are formed.
  3. Take out two scoops from the cream to the chocolate and mix. Now transfer this mixture back into the whipping cream and whip until stiff peaks are formed.

Assemble your cake:

Place one cake round on plate or cake stand. Add desired amount of chocolate frosting and spread into a smooth layer. Top with second cake round, Repeat with the third layer. Frost the outside of the cake with the same frosting. Coat the cake with powdered cookies and top with strawberries, chocolate sauce and some chocolate shavings. Enjoy!
