Malai Anda Curry without Malai

Ingredient

  • Boiled eggs 5
  • Onion 2 medium
  • Ginger 1.5 tsp
  • Garlic 1.5 tsp
  • Oil 1/4 cup
  • Star anise 1
  • Cinnamon stick 1
  • Cloves 2
  • Bay leaf 1
  • Cumin seeds 1/2 tsp
  • Green chilies slit 2-3 (add more for more spice)
  • Salt to taste
  • Black pepper powder 1/4 tsp
  • Cumin powder 1/4 tsp
  • Coriander powder 1/4 tsp
  • Garam masala 1/4 tsp
  • Milk 1.5 cups
  • Fresh green chilies
  • Fresh chopped coriander

Preparation

  1. In a blender, add onion, ginger, garlic and water. Blend into a fine paste.
  2. Heat oil in a pot and add star anise, cinnamon sticks, cloves, bay leaves and cumin seeds. Allow the cumin seeds to crackle.
  3. Add the onion paste and slit green chilies. Allow to cook until the oil separates from the masala.
  4. Now keep the flame low and add the milk, mix well.
  5. Add salt, black pepper powder, cumin powder, coriander and garam masala powder. Allow to cook for few minutes until the gravy thickens.
  6. Lastly cut the eggs into half and add to the gravy.
  7. Garnish with fresh coriander and green chilies.
  8. Enjoy with roti or naan.
