Quick Crispy Fried Chicken

Ingredients

  • Chicken on bones 1.2 to 1.5 kg, cut into small pieces
  • Gram flour (besan) 4 heaped tsp
  • Yogurt 5 tbsp
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Juice of 1 lime (or 2 tbsp)
  • Salt 1 tsp
  • Red chili powder to taste
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Coriander powder 1 heaped tsp
  • Cumin powder 1 heaped tsp
  • Black pepper powder 1/4 tsp
  • Chat masala 1/2 tsp
  • Hot sauce/red chili sauce 1 tbsp
  • Soy sauce 2 tbsp
  • Red food color 1/4 tsp (or as needed to make the marination dark red)
  • Rice flour 2 to 3 tbsp
  • Oil for deep frying

Preparation

  1. Clean, wash and drain the chicken pieces well.
  2. In a mixing bowl, add all the ingredients except rice flour and mix. Taste the marination and adjust the seasoning if needed.
  3. Add the marination to the chicken and mix well.
  4. Cover and marinate in the refrigerator overnight.
  5. When you want to fry, heat the oil on a medium flame, take out the chicken and add the rice flour just before frying. Mix and immediately put the pieces one by one into the oil.
  6. Fry for 6-7 minutes or until the chicken is cooked through.
  7. Enjoy with mint raita or imli chutney!
